  • ALWAYS keep a fire extinguisher nearby. The extinguisher should be rated to handle grease fires. (This might be marked as “Class B” or “Class K” depending on your area.) ALL operators should be shown the extinguisher’s location and trained in its use.

Installation

Selecting a Location

  • The location should be well-ventilated, with no combustible material within 18 inches of the sides, front, or rear of the oven and within 40 inches above the oven.
  • The surface on which to place the oven should be level, nonslip, and sturdy enough for the weight of the oven.

Unpacking

  1. Unpack the oven.
  2. Take out the oven and accessories from inside the oven.
  3. Check for any damage and missing.
    If any damage is spotted, contact the customer service.

Installing the Handle
Tool needed (not included): M8 Phillips screwdriver

To install the handle:

  1. Open the door by lifting it up and pulling it towards you.
  2. Align the holes on the handle with the holes on the door.
  3. Tighten the handle with the screws.

Installing the Pizza Stone

WARNING

  • Handle the pizza stone with care. Avoid hard contact with objects, as any internal cracks may develop and have the potential to escalate into a shattered stone.
  • NEVER allow the hot pizza stone to come into contact with cold water or vice versa. Both WILL damage it. In cold conditions, refrain from laying hot cookers on the stone, as this can lead to cracks.
  • Make sure the oven is not plugged to power and the heat elements are at room temperature.
    1. Open the door and make sure the bottom slot is clean and free of any debris or obstructions.
    2. Place the pizza lifter on middle of the brim of the oven cavity.
    3. Place the pizza stone B in the bottom slot A, ensuring that it fits securely and sits flat.WILPREP-CPO-320-Countertop-Commercial-Pizza-Oven-FIG- (11)
      WARNING
      Do not force or wedge it.
    4. Check for any wobbling or movement of the pizza stone.
      If there is any, readjust it until it sits firmly in place.

Connecting to Power

WARNING

  • ONLY use with compatible power source. DO NOT use 2-to-3 prong adapters.
  • ALWAYS make sure the circuit of the power source is capable of handling the full electrical draw of the oven.
  • ALWAYS make sure the circuit has a correct circuit breaker or ground fault circuit interrupter (GFCI) installed at an easily accessible place.
  • For the model with two decks, use two dedicated, separate circuits for the two plugs. NEVER connect them to one circuit unless the circuit is known to be of sufficient gauge to handle the combined electrical draw.
    1. Check the power switch is flipped to OFF.
    2. Connect the plug to the power outlet.
      If the plug does not fit fully into the outlet, contact a qualified electrician. Do not attempt to modify the plug in any way.

Operation

Tips and Hints

  • Make sure the pizza stone is dry before placing your pizza. Wet spots or spills can cause food to stick.
  • Never season the pizza stone with any kind of oil.
  • Excessively heated fat or oil can catch fire. If your pizza ingredients contain such items, watch closely and be prepared to respond.
  • Clean the pizza stone and the interior after each use. Burnt pizza scraps can adversely affect the flavor and performance of the oven.
  • This oven is equipped with upper and lower temperature limits, which allow for the exact doneness of a variety of toppings (with suitable temperature and time set).
  • DO NOT directly put frozen pizza on the stone and cook. Use an oven-grade plate instead. Water from defrosting may cause the stone to crack and WILL void warranty implied herein.
  • Increase temperature during heavy production times to maintain ideal baking temperature. Be sure to decrease it when rush slows to prevent burning.
  • Pizza with heavy toppings requires a lower temperature and longer baking time.
  • If toppings need more time to cook, placing a piece of screen under the pizza or turning down the temperature will save you pizza from being burnt.
  • To prolong the lifespan of the pizza oven, only use the interior light occasionally to check the food being cook, and turn it off when it is not needed. Prolonged exposure to high temperature can damage the light.

Using Your Oven First Time
For the first use, strictly follow the steps below:

  1. Turn the power switch to ON.
    The green power indicator light should come on.
  2. Open the door and set both temperature knobs to 425°F in order to burn off any residues from factory and shipping in this oven.
    The heating lights should come on and the heating elements should start heating.
  3. Turn the timer knob to 60.
    The timer should start the countdown and rings a “Ding” at the end of its countdown.
    Note: The timer doesn’t turn the heating off when the countdown is over.
  4. When the time is over, close the door and turn the temperature knobs to 525°F to run the oven for 2 hours.
  5. When finished, turn all knobs and switches to their original positions.

Note: Smoke and odor are normal during this process.

General Operating Procedure

WARNING

  • Only pizzas and breads can be placed directly on the pizza stone. All other food products must be put onto a tray or into a container rated for high temperature use.
  • DO NOT use this oven to defrost. Defrost and dry food before cooking with this oven.

To bake pizzas:

  1. Set the temperature knob to the desired temperature to preheat oven.
    When the temperature reaches the selected temperature, the yellow heating indicator light goes out, and the oven is ready to use.
    Recommended preheating temperature: 450˚–500˚F (230˚C–260˚C), depending on the ingredients of the pizza. When cooking, set the bottom heating elements with lower temp.
  2. Quickly open the oven door and transfer your raw pizza onto the pizza stone, being sure it sits roughly in the middle.
    Note: The shorter you keep the door open, the shorter the time needed for cooking.
  3. Set the baking time for each pizza.
    Here are some time recommendations. Individual results may vary depending on a variety of factors including pizza diameter, thickness, and so on.

    Thin crust pizza 25 cm/10 inches 10–15 minutes
    Thick crust or deep-dish pizza 30-40 cm/12–16 inches 12–18 minutes
  4. (Optional) Turn on the LIGHT switch to monitor the cooking status as needed.
    Remember to turn off the light switch after checking. Don’t leave the light always on.
  5. During the baking process, monitor the pizza status and rotate it as needed until the crust is crispy, cheese is melted, and toppings have been baked to a desired doneness.
  6. When the timer chimes, take out the pizza.
    Note: When the timer dings, it does not stop the heating. If stopping the heating is needed, turn both heating knob to “MIN” and flip off the power switch.
  7. Repeat steps 2–6 to bake other pizzas.
  8. Turn all knobs and switches to their original positions and unplug from the wall socket to prevent any accidental hazard.

Cleaning

Regular cleaning prolongs the lifespan of your oven and ensures it operates at peak performance.

DANGER
Ensure that the oven is unplugged and has completely cooled to room temperature before cleaning.

WARNING

  • DO NOT direct pressurized water towards any part of the oven.
  • DO NOT rinse, immerse, or soak this oven.
  • DO NOT scrape the surfaces with hard and sharp utensils as this could damage the surfaces.

To clean the oven:

  1. When opening oven door, be sure to guide the door while lowering it.
    Doing so will prevent possible damage to the door jamb after an extended period of time.
  2. Remove the pizza stone from the cool oven using the pizza stone lifter.
  3. Clean the pizza stone.
    To clean the light soiled area, scrape off hardened spillage with a pizza stone brush.
    To clean the heavily soiled area:
    • Return the pizza stone to oven and run at high temperature in a well-ventilated area for 30 minutes.
    • Allow the oven to cool down completely.
    • Remove the pizza stone and brush off residue.
      WARNING
      NEVER allow the hot pizza stone to come into contact with cold water or vice versa. Both WILL damage it. In cold conditions, refrain from laying hot cookers on the stone, as this can lead to cracks.
  4. Wipe the oven interior with a dry cloth, avoiding heating elements.
  5. To clean the oven exterior, use stainless steel cleaner and wipe in the direction of the grain.
  6. To clean the glass door, use a glass cleaner or damp cloth and dry with clean cloth.
